Canning Tomatoes
We live on a mountain in Alabama that is known for it's tomatoes. There are fields and fields of them. Here at home we plant a few tomato plants for summer salads, but in September and October (when it is cooler) we go to the fields that have already been picked for market (usually by migrate workers), and pick what is left, you would be AMAZED at how many GOOD tomatoes are left behind. You can pick a box for $3-$5. I usually can 100-150 quarts.
